Go Green for Spring!

Popeye loved his spinach even if he did not know how nutritious it was.  Green vegetables and fruit contain lots of vitamins and minerals. Top nutrients found in green foods are vitamin C, potassium, folate, and vitamin A.  Adding lettuce to a sandwich or eating grapes with lunch will power pack the meal. Here are some easy green vegetables and fruit to include every week.

 

Green Grapes – Freeze a bunch of grapes and put them in the lunch bag. They will keep everything cool.

 

Romaine or Spinach Lettuce – Add a slice of lettuce to a sandwich or a wrap at lunch. These greens will add a little crunch for lunch.

 

Kiwi Kiwi is a fruit originally from New Zealand.  Eat one a day and get a vitamin C boost.

 

BroccoliBroccoli is a good choice whether it is eaten raw with ranch dressing or steamed in the microwave.

 

Kale or Mustard GreensGreens are high in vitamin K and beta carotene. Two nutrients that are cell protectors, called antioxidants.

 

Brussel Sprouts Brussel sprouts are part of the cabbage family. Many people dislike brussel sprouts because they smell when they are cooked. Buy the smaller, compact brussel sprouts. Cook them lightly to reduce their odor. Do not overcook them or else they will stink.

 

Plan ahead and it will be easy to "Go Green this Spring".
